Tropical Green Smoothie

1 banana,peeled 1 cup kale leaves 1 cup cubed pineapple Juice of one lime 1 cup unsweetened almond or coconut milk In blender or food processor, blend all ingredients.         


 Almost like a hummus!...perfect with home-made bagel chip and pita recipes to follow!  Makes 1 ½ cups dip, 6 servings. 1 can( 16 oz.) white cannellini beans, rinsed and drained Roasted garlic, peeled & slightly smashed 1 tablespoon fresh lemon juice 1 tablespoon lemon zest 1 tablespoon chopped fresh rosemary ½ teaspoon cumin Salt & pepper to taste  In food processor, process all ingredients until smooth.   

1 cup oat Flour
1 cup All-purpose Flour
¼ plus plus 1 tablespoon sugar
1½ teaspoon baking powder ½ teaspoon salt
¼ cup chilled butter, cut into small pieces
½ cup almond milk 1 egg, slightly beaten
1 tablespoon fresh lemon rind from 1 lemon
​½ cup each, Blueberries, Raspberries and sliced Strawberries Preheat oven to 400 degrees. In large bowl, combine flours, ¼ cup sugar, baking powder and salt. Stir in gently butter into well combined. Add milk and eggs and then berries. With floured hands, turn dough onto baking sheet lined with parchment paper. Shape into flat circle about ½ inch thick. slice down with long sharp knife into 8 triangles.Sprinkle with remaining 1 tablespoon sugar. Bake for 20 to 25 minutes or until lightly browned. Makes 8 scones.

Triple Threat Scones

Grilled FRuit Kebobs

 1- ½ cups Greek plain yogurt 1 tablespoon fresh grated orange rind 2 tablespoons fresh lime juice 1 tablespoon honey plus 2 tablespoon ½ teaspoon vanilla extract ½ teaspoon cinnamon 2 firm bananas, peeled and cut into quarters 2 peaches or nectarines, pitted and cut into quarters 2 kiwi, peeled and cut into quarters 2( 1-inch rounds) pineapple sliced, cut into quarters 8 strawberries In small bowl, combine yogurt, ½ tablespoon orange rind, 1 tablespoon lime juice, 1 teaspoon lime rind, 1 tablespoon honey, vanilla, and cinnamon; chill. Thread fruit on skewers. Combine remaining orange and lime juice with remaining orange and lime rind. Grill or broil fruit kababs 5 minutes, turning and brushing with orange-lime mixture. Serve with chilled yogurt sauce. Makes 4 servings. 2 skewers each.
